Method
- Season the beef chuck roast with salt and pepper.
- In a skillet over medium-high heat, sear the beef roast on all sides until browned. This step is optional but adds flavor.
- Place the seared roast in your slow cooker.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
- Stir in the beef broth, Worcestershire sauce, soy sauce, and dried thyme. Bring to a simmer.
- Pour the sauce mixture over the beef in the slow cooker.
- Cover and cook on low for 8 hours or on high for 4-5 hours, or until the beef is tender.
- Remove the beef from the slow cooker and let it rest for 10 minutes before shredding or slicing.
- While the beef rests, thicken the sauce. Whisk the cornstarch and water mixture into the simmering liquid in the slow cooker. Cook on high for a few minutes until the sauce has thickened.
- Serve the shredded or sliced beef with the thickened garlic butter sauce.
Notes
You can serve this beef with mashed potatoes, rice, or your favorite vegetables. For a richer flavor, you can add a splash of red wine to the sauce.
