Slow Cooker Garlic Butter Beef

Ingredients
  

For the Beef
  • 3 lb beef chuck roast trimmed
  • 1 tsp salt
  • 1 tsp black pepper
For the Sauce
  • 1 cup beef broth
  • 1/2 cup butter unsalted
  • 4 cloves garlic minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tbsp cornstarch mixed with 2 tbsp water

Method
 

  1. Season the beef chuck roast with salt and pepper.
  2. In a skillet over medium-high heat, sear the beef roast on all sides until browned. This step is optional but adds flavor.
  3. Place the seared roast in your slow cooker.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
  5. Stir in the beef broth, Worcestershire sauce, soy sauce, and dried thyme. Bring to a simmer.
  6. Pour the sauce mixture over the beef in the slow cooker.
  7. Cover and cook on low for 8 hours or on high for 4-5 hours, or until the beef is tender.
  8. Remove the beef from the slow cooker and let it rest for 10 minutes before shredding or slicing.
  9. While the beef rests, thicken the sauce. Whisk the cornstarch and water mixture into the simmering liquid in the slow cooker. Cook on high for a few minutes until the sauce has thickened.
  10. Serve the shredded or sliced beef with the thickened garlic butter sauce.

Notes

You can serve this beef with mashed potatoes, rice, or your favorite vegetables. For a richer flavor, you can add a splash of red wine to the sauce.
