Ingredients
  

For the Skillet
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 5 ounces baby spinach
  • 1.5 cups cooked quinoa
  • 1 cup vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and sliced mushrooms. Cook until mushrooms are tender, about 5-7 minutes.
  4. Stir in the baby spinach and cook until wilted, about 2-3 minutes.
  5. Add the cooked quinoa, vegetable broth, salt, and pepper. Stir to combine and heat through, about 5 minutes.
  6. Serve immediately.
