Sun-Dried Tomato Chicken

Ingredients
  

  • 4 boneless, skinless chicken breasts about 6 ounces each
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes oil-packed, drained and chopped
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons fresh parsley chopped
  • salt to taste
  • black pepper to taste

Method
 

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant. Stir in chopped sun-dried tomatoes.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Stir in heavy cream, chopped basil, and chopped parsley. Cook for 2-3 minutes until the sauce has thickened slightly.
  6. Return chicken to the skillet and spoon the sauce over it. Cook for another minute to heat through.
  7. Serve immediately.

Notes

You can serve this chicken with pasta, rice, or a side salad.
