- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, diced sweet potato, chili powder, cumin, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the sweet potato begins to soften.
- Stir in the rinsed and drained black beans, cooked rice, and vegetable broth. Bring to a simmer.
- Cover the skillet and cook for 10-15 minutes, or until the sweet potato is tender and the liquid has been mostly absorbed.
- Serve hot, garnished with fresh cilantro if desired.
Notes
You can add other vegetables like bell peppers or corn. For a spicier dish, add a pinch of cayenne pepper.
