Texas Roadhouse Butter Chicken Skillet

A quick and easy butter chicken recipe made in a skillet, inspired by Texas Roadhouse.

Ingredients
  

For the Chicken
  • 1.5 lbs Boneless, skinless chicken thighs Cut into bite-sized pieces
  • 1 tbsp Olive oil
  • 1 tsp Garam masala
  • 1 tsp Turmeric
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
For the Sauce
  • 1 medium Onion Finely chopped
  • 3 cloves Garlic Minced
  • 1 inch Ginger Grated
  • 1 can Diced tomatoes 14.5 oz, undrained
  • 1 cup Heavy cream
  • 2 tbsp Tomato paste
  • 1 tbsp Honey
  • 1 tsp Garam masala
  • 0.5 tsp Cumin
  • 0.25 tsp Cayenne pepper (optional, for heat)
  • 0.5 tsp Salt To taste
  • 0.25 cup Fresh cilantro Chopped, for garnish

Equipment

  • Large skillet
  • Cutting board

Method
 

  1. In a bowl, toss the chicken pieces with olive oil, garam masala, turmeric, salt, and pepper. Set aside.
  2. Heat the large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and grated ginger and cook for 1 minute more until fragrant.
  4. Stir in the diced tomatoes (with their juice), heavy cream, tomato paste, honey, garam masala, cumin, and cayenne pepper (if using). Bring to a simmer.
  5. Return the chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Season with salt to taste. Garnish with fresh cilantro before serving.
