- Mash the banana in a bowl until it is mostly smooth. You can use a fork or a blender for this step.
- Whisk the egg into the mashed banana until combined.
- Stir in the flour and cinnamon, if using, until you have a smooth batter.
- Heat a lightly oiled frying pan or griddle over medium heat.
- Pour small amounts of batter onto the hot surface to form pancakes. Cook for about 2 to 3 minutes per side, until golden brown and cooked through.
Notes
If you use a blender, the batter will be smoother. If you prefer a thicker pancake, you can reduce the flour slightly or use a slightly smaller banana. If you omit the flour, you will have a two-ingredient recipe, but the texture will be more like scrambled eggs.
