- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add the chopped onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and bring to a simmer. Stir in the frozen peas and dried thyme. Season with salt and pepper to taste.
- While the filling simmers, boil the potatoes in salted water until tender. Drain well.
- Mash the potatoes with the warm milk and butter until smooth. Season with salt and pepper to taste.
- Pour the turkey filling into a baking dish.
- Spread the mashed potato topping evenly over the turkey filling.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
Notes
For an extra golden topping, you can brush the mashed potatoes with a little melted butter before baking.
