Turkey & Veggie Zucchini Skillet

Ingredients
  

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium zucchini diced
  • 1 cup cherry tomatoes halved
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt to taste salt
  • Pepper to taste black pepper

Equipment

  • Large skillet
  • Knife
  • Cutting board

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Add diced zucchini and halved cherry tomatoes to the skillet. Cook, stirring occasionally, until zucchini is tender-crisp, about 7-10 minutes.
  5. Stir in dried oregano and basil. Season with salt and pepper to taste.
  6. Serve hot.

Notes

You can add other vegetables like bell peppers or spinach. Serve as is or over rice or quinoa.
