- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add diced zucchini and halved cherry tomatoes to the skillet. Cook, stirring occasionally, until zucchini is tender-crisp, about 7-10 minutes.
- Stir in dried oregano and basil. Season with salt and pepper to taste.
- Serve hot.
Notes
You can add other vegetables like bell peppers or spinach. Serve as is or over rice or quinoa.
