- In a large pot, brown the sausage for 5 to 6 minutes. Use a slotted spoon to remove the sausage and set it aside on a plate.
- In the same pot, add the butter and cook the onions over medium heat until they become translucent.
- Add the garlic and cook for one more minute until it smells fragrant.
- Add the chicken broth, water, potatoes, salt, and pepper. Bring the mixture to a boil, then cook until the potatoes are tender.
- Stir in the kale and heavy cream. Add the cooked sausage back into the pot. Taste the soup and add more salt and pepper if you think it needs it.
- Serve the soup garnished with grated parmesan cheese and/or bacon bits, if you are using them.

Notes
If you use regular ground sausage instead of spicy Italian sausage, add 1 teaspoon of dried Italian herb seasoning or Herbs de Provence plus a pinch of crushed red pepper flakes to the sausage while browning.
