Tuscan Sausage and Kale Soup

Ingredients
  

  • 1 pound Spicy Italian ground sausage Use mild for kid-friendly version
  • 4 tablespoons Butter
  • 1/2 White onion diced
  • 1 tablespoon Minced garlic
  • 6 cups Chicken broth
  • 2 cups Water
  • 4 Yellow potatoes cut into 1-inch pieces
  • 3 teaspoons Salt or to taste
  • 1 teaspoon Black pepper
  • 2 cups Heavy cream
  • 4 cups Chopped kale
Toppings (Optional)
  • As needed Chopped bacon or bacon bits
  • As needed Grated parmesan cheese

  • Slotted spoon

Method
 

  1. In a large pot, brown the sausage for 5 to 6 minutes. Use a slotted spoon to remove the sausage and set it aside on a plate.
  2. In the same pot, add the butter and cook the onions over medium heat until they become translucent.
  3. Add the garlic and cook for one more minute until it smells fragrant.
  4. Add the chicken broth, water, potatoes, salt, and pepper. Bring the mixture to a boil, then cook until the potatoes are tender.
  5. Stir in the kale and heavy cream. Add the cooked sausage back into the pot. Taste the soup and add more salt and pepper if you think it needs it.
  6. Serve the soup garnished with grated parmesan cheese and/or bacon bits, if you are using them.

Notes

If you use regular ground sausage instead of spicy Italian sausage, add 1 teaspoon of dried Italian herb seasoning or Herbs de Provence plus a pinch of crushed red pepper flakes to the sausage while browning.
