- In a bowl, whisk together chia seeds, almond milk, maple syrup, and vanilla extract until well combined.
- Let the mixture sit for 5 minutes, then whisk again to break up any clumps.
- Pour the mixture into a jar or container, cover, and refrigerate for at least 2 hours, or preferably overnight, until thickened.
- If using fresh raspberries, gently mash them with a fork. If using frozen, thaw them slightly and mash.
- Once the chia pudding is set, swirl in the mashed raspberries.
- Serve chilled.
Notes
You can adjust the sweetness to your preference. Feel free to add other toppings like fresh fruit or nuts.
