Vegetable Soup

Ingredients
  

For the Soup
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) diced tomatoes, undrained
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 cup chopped potatoes
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment

  • Large pot
  • Knife
  • Cutting board

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in vegetable broth and add diced tomatoes, carrots, celery, potatoes, corn, peas, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  5. Serve hot.

Notes

You can add other vegetables like green beans or spinach. Adjust seasonings to your taste.
